BREAD MIXES/BASES

MULTISEED BREAD CONCENTRATE

A Low GI concentrate containing pumpkin, linseed and sunflower seeds, wheat bran and oat flakes adding that extra bite to this darker style of bread with a coarser open texture. Goods produced from this mix are officially classified as Low GI.

BAKELS CIABATTA CONCENTRATE

For the production of classic Italian bread.

For convenient production of bagels.


BREAD & ROLL IMPROVERS/EMULSIFIERS

POWDERED IMPROVER

General purpose powdered improver containing soya which is economical in use for the production of bread, rolls and morning goods, including wholemeal.

PASTE IMPROVER

General purpose improver for the production of bread, rolls and morning goods including wholemeal in a concentrated paste form.

FRENCH IMPROVER

Powdered improver for the production of all crusty rolls, Vienna type breads, baguettes and petits pains.

LIQUID IMPROVER

Bread improver in pourable form. Combines all required improvers, emulsifiers and soya flour for doughs.


SHELF LIFE EXTENDERS, CRUMB SOFTENERS & PRESERVATIVES

BACOM

Distilled Monoglyceride in paste form for improved softness and shelf life.

MONOFRESH SUPER

Enzyme based crumb softeners and anti-staling agent in convenient powder form, for extended shelf life and softness in bread rolls and all fermented goods.

CP 30/CSP 60

Powdered mould inhibitor for use in all bread and roll production.


ROLL/BUN CONCENTRATES

CRUSTY CONCENTRATE

Powdered concentrate for the production of high volume crusty rolls, French sticks, baguettes and similar crusty lines. Provides an excellent crispy crust, bold volume, good crust retention and economy in use.

PREMIUM ROLL CONCENTRATE

For the production of high volume soft rolls and baps with a good shelf life.

BAKELS BUN CONCENTRATE

A powdered concentrate for the convenient production of high quality sweet yeast goods such as buns and doughnuts.


BREAD & CAKE RELEASE & DIVIDER OILS

TINCOL

Reliable and economical tin and tray greasing medium, ensures a consistent non-stick release of bread and rolls.

DOVIDOL

For the greasing of dough dividers, bowls, chutes, hoppers etc.

SPRINK

A general purpose release agent in a convenient, easy to use aerosol can, for both bread and confectionery goods. Provides a clean release for bread tins, trays, pizza pans and foils.

TINGLIDE

All purpose confectionery release agent for the hand greasing of confectionery trays. Particularly suited for the craft baker being packed in re-sealable pails.

TINCLEAR

Confectionery release agent dosed to the addition of natural waxes to vegetable oil. Particularly used in spray systems and oven band greasing.


PASTRY RELAXANT

PASTRY RELAXER

Powdered pastry relaxer to prevent shrinkage of puff and pie pastry. Provides improved machinability and prevents sticking through the rollers. A percentage of scrap paste can be added to fresh pastry for cost effectiveness.


PIE FILLING THICKENER

PETTINA THICKENER

Starch based, bake stable stabiliser for the production of meat pies etc. A hot process product which to thicken, has to be cooked with the pie filling or gravy.


SPONGE & CAKE EMULSIFIERS

OVALETT

Sponge emulsifier compound in paste form, which allows the "all in" method of sponge and cake production to be used. Extends softness and fresh keeping properties. Especially designed for 'hi-ratio' sponges and also suitable for 'hi-ratio' cake as well as plain flour cakes and sponges.

BAKELS BREADS FATS

General purpose shortening for use in bread and yeasts goods where a higher fat content is preferred. Gives added volume, crumb softness and improves crumb texture.

CAKE & PASTRY MARGARINE

General purpose vegetable oil based margarines for confectionery or savoury applications.

BAKELS SHORTENING

General purpose shortening for breads, biscuits and other baked goods.


BAKING POWDERS

HERCULES BEST

High strength quality baking powder, suitable for plant or longer process baking methods, craft bakeries and for the production of scones, sponges, cake, cake muffins and Swiss roll.

HERCULES DOUBLE

High quality baking powder with dual action gas release. Particularly suitable for craft bakery lines, speciality breads, pizza and naan, plus most cake applications.


CONFECTIONERY SHELF LIFE IMPROVERS

POWDERED MOULD INHIBITOR

Powdered mould inhibitor for use in all flour confectionery, cake and sponge batters.

CAKE FLAVOUR ENHANCER

Developed to prolong the fresh keeping and reduce the risk of mould growth in sweet flour confectionery and some bun goods, where extended wrapped shelf life is required.


CAKE & SPONGE MIXES

PLAIN SPONGE & CHOCOLATE SPONGE MIX COMPLETE

For the production of excellent quality sponge products, with a true chocolate colour and flavour. Quick to prepare, add water only for sponges with good volume and excellent eating qualities.

BAKELS CAKE CONCENTRATE

Highly versatile concentrate for the production of moist premium batter & foam type cakes, slices, muffin, cupcakes and cookies.

FRUIT CAKE COMPLETE

A complete mix containing egg. Requiring only the addition of water and dried fruit, to produce a variety of delicious fruit cakes.

AMERICAN BROWNIE COMPLETE

A mix to which water only is added providing delicious, mouth watering American style brownies, rich and moist to eat with a degree of chewiness to suit all tastes. Top with FUDGICE.

CHIFFON CAKE MIX

For the convenient production of all types of chiffon cakes. Powdered form.


DOUGHNUT MIXES

YEAST DOUGHNUT CONCENTRATE

A concentrate for top quality short eating doughnuts to which, for economy, flour, yeast and water are added.

CAKE DOUGHNUT COMPLETE

A complete doughnut mix to which the baker adds water only to produce top quality, batter deposited cake doughnuts, easy to deposit with minimum fat absorption.


CONFECTIONERY MIXES

CHOUX PASTE MIX

For economical top quality eclairs and profiteroles which are easy to pipe and deposit. Just add egg and water.

VIENNESE MIX

Viennese biscuits and shells are made quickly and easily with this paste concentrate. Add water and flour to form a smooth, easy to pipe paste which provides traditional Viennese biscuits etc. which are consistent, with a delicious flavour, short and tender to eat.

KOKOMIX

A versatile product, add cold water only for delicious moist eating coconut tray bake lines, or deposit with a scoop for coconut rocks.

A complete biscuit mix for all types of biscuits and cookies.

BAKELS SCONE MIX

Powder form, for the convenient production of scones and sugar buns.

BAKELS PUDDING MIX NEUTRAL

A complete mix with easy preparation method by adding only water or milk or cream and bring it to boil to produce the most popular variety of pudding.


DESSERT MIXES

CHEESECAKE MIX

Produces premium quality chilled American style cheesecakes with a delicious flavour. Made from real cheese with a subtle hint of lemon, they cut cleanly and are freeze stable. Simple and quick to prepare - add cold water and chill.

NEUTRAL FONDS

Neutral base powder requiring the addition of water, fruit juice, plus liquid cream. The ideal product for bar lines, using sponge as a base, topped with fruit and cut into portions, or used as individual desserts.

CHOCO MOUSSE AND WHITE CHOCO MOUSSE

Two base powders for the production of delicious chocolate mousses for filling sponges, gateaux or simply eating on their own as a dessert, when piped into a dish and decorated with fresh cream and flaked chocolate. Blend the two together to produce a milk chocolate mousse.

BAKELS TIRAMISU

For the easy preparation of Tiramisu dessert products.


MERINGUE MIXES

ACTIWHITE

Powdered mix manufactured from hen egg albumen, for the production of top quality traditional meringue shells, nests and discs for pavlovas, that eat crisp and dry, have a good white colour and handle well. Can also be used in Royal Icing.

MERINGUE TOPPING

Manufactured from hen egg albumen, this powdered product is quick and simple to prepare into a stable meringue for the topping of lemon meringue pies. Easy to pipe and once baked, has a firm outer shell with a soft eating mallow centre, which cuts easily and handles well without breakage.


CUSTARD MIXES

INSTANT CUSTARD

For any type of custard product including vanilla slices, custard yeast buns, Danish pastry. Pourable custards can be produced by the addition of extra milk.

BAKED CUSTARD MIX

For the production of custard tarts the quick and easy way without baking. The custard is prepared by mixing with boiling water and pouring into prebaked pastry shells. On cooling it sets quickly without shrinkage, to a smooth delicately flavoured firm custard.


ICINGS, TOPPINGS & FILLINGS

BAKELS RTU ICINGS

Icings are available to decorate all types of block, roundcakes and slice lines. Flavours include: chocolate, coffee, cream cheese, lemon, raspberry, white & pineapple, all of which give an excellent finish.

BAKELS FUDGICE

A delicious soft eating fudge topping that sets with a non-stick surface whilst remaining soft to eat. Suitable for topping doughnuts, brownies and buns. Available in a number of flavours.

PETTINICE

Ready to roll sugar paste straight from the pail. The quick and simple way to cover celebration and novelty cakes. Available in a range of colours.

MILLIONAIRES CARAMEL

For topping and filling shortbread and similar products.

BAKELS WHIPPING CREAM

Icing and Filling in paste form for non-refrigerated cakes and speciality baked goods.

NON TEMPERING CHOCOLATE FLAVOURED COATINGS

Bakels top quality chocolate flavoured coatings in button form, for all chocolate work, available in light and dark varieties. With their high sheen and good flavour, these coatings are suitable for the modelling of Easter eggs and Christmas figures.

BAKELS TRUFFLE

For all types of sweet confectionery, RTU topping & filling in paste form. Including hazelnut and chocolate.

BAKELS DUSTING SUGAR

Baking finishing sugar. Enhances the appearance of a wide range of bakery lines such as sponges, doughnuts and sweet pastry goods. Holds the appearance for an extended time.


FRUIT PREPARATIONS

With a range of sizes, Bakels fruit preparations have a high fruit content (up to 90%) suitable for a wide range of pastry/confectionery products, in particular topping premium dessert lines such as cheese cakes, fonds and mousses. Available in a wide range of flavours including Raspberry, Kiwi, Strawberry and Mango.


CONFECTIONERY GLAZES

INSTANT SUPERGLAZE

Top quality glaze for Danish Pastries, Fruit Tarts and similar products, for application either by spray gun through glazing machines, or by hand. Instant Superglaze sets to a smooth, bright, transparent glaze which is non-sticky and freeze stable under certain conditions.

RTU STRAWBERRY GLAZE

Ready to use glaze, for use on cold products including tarts. Provides an instant strawberry coloured and flavoured glaze to confectionery goods. Other flavours include Chocolate, Caramel and Apricot.

HOT CONCENTRATED GLAZES

These economical glazes give an excellent shine to any product applied to; Bakels Hot Concentrated Glazes are freeze/thaw stable, and have great stability on glazes surfaces with high water absorption.


SAVOURY GLAZES

BAKELS SAVOURY GLAZE

An easy to prepare, all purpose pre-bake glaze in paste form containing added natural colour to enhance the overall appearance of the baked goods, providing an excellent sheen to products such as meat pies, sausage rolls, Cornish pasties and similar savoury pastry lines.


SWEET GLAZES

RTU BUN GLAZE

Ready to use glaze for glazing all sweet fermented goods, Hot Cross Buns and Fruit Loaves etc. providing an excellent sheen which is non-sticky to handle once applied, also available in a spiced variant to deliver a spicy flavour.
